​With the wheat harvest in the United Kingdom having wrapped up, ADM Milling UK’s technical team recently held their annual bake-off event to assess how the new crop flour stacks up against its old crop equivalent. Two days of baking provided an ideal opportunity for colleagues to experience firsthand how various doughs perform in different applications. In total, more than 20 flours were used to produce 10 products, including a variety of breads and rolls, pizzas and baguettes, puff pastry and ciabattas. The exercise allowed the team to collate a range of recommendations — for the business and customers — concerning any products which might present challenges during the current season.
